Roast Turkey with Giblet Gravy

Ingredients

  • 1 fresh 12-pound turkey, neck, heart, gizzard and liver reserved
  • 8 T. butter, at room temperature
  • 3/4 C. canned chicken broth
  • 1/4 C. peanut oil
  • 1 yellow onion, unpeeled, coarsely chopped
  • 2 large carrots, unpeeled, coarsely chopped
