Ingredients

  • 1 scallion, thinly sliced
  • 2 leaves green-leaf lettuce, thinly sliced
  • 2 leaves chicory, thinly sliced
  • 4 sunny-side-up eggs
  • 4 Cup cooked white sushi rice
  • 8 Ounce firm tofu, cut into 1/2″-thick slabs
  • 3/4 Teaspoon sesame seeds
  • 1/4 small daikon radish, julienned
  • 2 medium carrots, julienned
  • 2 small Korean squash or zucchini, halved and cut crosswise into 1/4″-thick slices
  • 6 Ounce gosari (called bracken fern), cut into 3″ pieces (optional; see page 132)
  • 2 1/2 Teaspoon minced ginger Kosher salt and black pepper, to taste
  • 2 Tablespoon plus 2 tspminced garlic
  • 3 Teaspoon sesame oil
  • 6 Tablespoon canola oil
  • 8 Ounce baby spinach
  • 4 Ounce mung bean sprouts
  • 1 1/2 tspsesame seeds
  • 1 Tablespoon brown rice vinegar
  • 2 Tablespoon minced ginger
  • 2 Tablespoon minced garlic
  • 2 Tablespoon sesame oil
  • 2 Tablespoon corn syrup
  • 3 Tablespoon doenjang (Korean soybean paste; see page 132) or miso
  • 6 Tablespoon lemon-lime soda, such as Sprite
  • 3/4 Cup gochujang (Korean spicy soybean paste; see page 132)
