When you marry the flavors of strawberry together with Funfetti, something magical happens. It might just be the sprinkles, but you will have to decide. This Funfetti strawberry poke cake is a strawberry cake with a Funfetti whipped cream.

If you haven’t tried my Funfetti whipped cream, you’re definitely missing out. A couple years ago, I decided to try adding cake mix to my whipped cream in addition to powdered sugar. The results were to-die-for. The cake mix makes a thicker and more stable whipped cream with a subtle cake flavor. I’ve used it for cakes, cupcakes and even as a dip.

There is no denying that poke cakes are always the life of the party. Truth be told, I didn’t really eat a ton of poke cakes prior to starting my blog, or maybe I did and I just didn’t know it. However, since I started experimenting with different flavors, I just couldn’t stop.

Now I bring a LOT of desserts into my office, but the poke cakes are always the first to go. They are also the most common dessert I make for a company party.

These cakes are incredibly easy. Of course you can make one from scratch, but I prefer the ease of a cake mix. Sometimes I’ll add in ingredients that aren’t listed on the box. That might include milk instead of water, sour cream or Greek yogurt, extracts, or extra egg/egg whites. It’s nice to play around and make the cake your own.

For this recipe, I used a strawberry cake mix and added a touch of strawberry extract. The extract is optional, and not a common ingredient that I use often, but I happened to have it leftover in my cupboard so I added it to this cake. You might even consider adding chopped strawberries as well. I chose to garnish this cake with strawberries instead.

Once baked, the cake is filled with some sort of “wet” ingredients such as sweetened condensed milk, pudding, fruit filling, fudge or caramel sauce. You get the idea. Then it needs a topping. Sometimes I go a little crazy, and sometimes I keep it simple with a homemade whipped cream.

While I was brainstorming and researching new flavors for poke cakes, I started combining flavors that I love but might not necessarily be paired together. Enter strawberry Funfetti poke cake.

Funfetti Strawberry Poke Cake Recipe

Ingredients
For the Cake:

  • 1 box strawberry cake mix, (pillsbury preferred)
  • 1 3.4 ounce box instant vanilla pudding
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 3/4 cup milk, or water
  • 3/4 cup light sour cream, or vanilla greek yogurt
  • 1 teaspoon strawberry extract, (optional, substitute vanilla)
  • 1/4 cup sprinkles
  • 1 14 ounce can sweetened condensed milk

For the Topping:

  • 1 1/2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1/4 cup vanilla cake mix, dry
  • sprinkles, for garnish
  • strawberries, for garnish

Directions

For the Cake:

  1. Preheat oven to 350° F.
  2. In a medium-sized bowl, combine cake mix, dry pudding mix, vegetable oil, eggs, water, sour cream, and strawberry (or vanilla) extract. Beat on medium – high speed until all ingredients are well blended. Lastly, add sprinkles and mix until incorporated.
  3. Pour the batter into a 9-inch by 13-inch pan and bake at 350°F for 20-25 minutes until cake is set. Test cake by inserting a toothpick into the center. If the toothpick comes out clean, the cake is done. Allow to cool for 20 minutes.
  4. While the cake is still warm, take the end of a wooden spoon or another round object and poke holes all over the top of your cake. Pour the jar of sweetened condensed milk over top of the holes as equally as you can. Allow the cake to cool completely, refrigerating if necessary.

For the Topping:

  1. Place the metal bowl and whisk in the freezer for about 15 minutes until they are good and cold.
  2. Pour the heavy whipping cream into the chilled mixing bowl and beat on high until bubbly.
  3. Add the powdered sugar and dry cake mix and continue to beat until stiff peaks form.
  4. Spread over cooled cake.
  5. Garnish with sprinkles and fresh strawberries. This cake must then be refrigerated after adding the whipped cream.
