Anytime is a perfect time for Celebration Ice Cream Cake.  Whether it is a birthday, graduation, anniversary or job promotion there is something decadent about a brownie bottom ice cream cake. Now this particular recipe calls for Ghirardelli brownie mix.  I think Ghirardelli is one of the best around and sometimes you need a few shortcuts in your life.  I could use a dozen shortcuts today alone.

This easy Celebration Ice Cream Cake is made in a spring-form pan making it easy to remove and serve company.  I love the ease of the these pans.  You will need to start out a little early in the day or the night before by baking the brownie mix.  It will have to cool for several hours and the ice cream will need to set in the freezer for an hour or so.  You can prepare the mini dipped Oreos ahead of time as well.

Celebration Ice Cream Cake

Ingredients

  • Ghirardelli Triple Fudge Brownie Mix
  • 1/4 cup water
  • 1/4 cup oil
  • 1 egg
  • 1.5 quart Breyers Birthday Blast Ice Cream
  • 1 cup mixed colors small sprinkles
  • 2/3 cup Ghirardelli chocolate chips
  • 8 ounce bag Oreo mini cookies

Instructions

  1. Preheat oven to 325 degrees. Spray spring form pan with nonstick baking spray. Place water, oil and egg in medium bowl and stir until fully mixed. Add brownie and fudge packet (enclosed) and stir until blended. Pour in spring form pan and bake for 40 minutes. Remove from oven and allow to cool 2 hours up to overnight. DO NOT REMOVE FROM PAN.
  2. Spread the ice cream evenly over the brownies and place in freezer for one hour.
  3. Place sprinkles in small bowl Melt chocolate chips in small microwavable bowl according to instructions on bag. Dip each mini cookie halfway into chocolate and then in into sprinkles. Move cookies to wax paper to set. Continue until you have used about 2/3's of the Oreo bag.
  4. Remove spring form pan from cake. Top with mini Oreos and drizzle cake with remaining chocolate.

Notes

If chocolate starts to harden before you get the cake drizzled place in microwave for 30 second increments at 50% power until the chocolate is melted and smooth again. Stir fully between the 30 second increments.
