Roasted Salmon and Artichoke Hearts
Twenty minutes seems to be the sweet spot. It’s just enough time for the artichoke hearts to soften slightly while still retaining their crunch, but not so long that the salmon dries out. Hence, a main and a side turns into a one-pan meal. If, however, you prefer your artichokes on the softer side, feel free to blanch them first. See all salmon recipes. Lightly Smoked Salmon
OK, this salmon isn't really lightly smoked (there's not even wood chips involved in this recipe), but doesn't it just bother you when someone says grilled salmon and it really was sitting on top of a piece of aluminum foil? Maybe it's just me, but I hope you don't hold it against me for using the term here, because in essence, that's what happened to this salmon. The open flames of the grill may not have touched the salmon directly, but they created enough smoke to slowly and tenderly cook the fillet so that it turns out moist and flavorful. Salmon Teriyaki
Quick, easy, and simple. While I'm normally a stickler for making most things from scratch, for some things I think it really just makes more sense to take the semi-homemade approach to this salmon dish. (Admittedly, I do cringe slightly every time I hear that term.) I can sense the authenticity police coming after me already, but hey, who are we kidding? This is teriyaki. Parmesan
If I do say so myself, this recipe is damn good. It was so good, in fact, that the second it was ready, we inhaled the entire thing, putting our forks down only onto empty (nearly licked) dishes, and then realized we’d forgotten to take pictures (hence the lovely stock photo you see). But trust me, the delicately pink poached salmon looks beautiful atop white rice dotted with Parmesan and bright red cherry tomatoes. It’s light, but has tons of flavor; it’s buttery, but doesn’t feel fatty; and it’s not that difficult to make. There are two main parts to think about: the rice, which can be all but left alone, and the salmon poaching which takes a bit more hand holding. I took my poaching cues from the one and only Eric Ripert, making them my own with white wine instead of vermouth and leaving out other steps and ingredients. But still, why not learn from the best? Just be prepared that whomever you make this for will request it the next night, and the next night…  Click here to see The New and Improved Farm-Raised Salmon story.

Maple-Glazed Salmon
This is my go-to, I'm-too-tired-tired-to-cook-something-hearty favorite. There is something about the rich, buttery flavor of the salmon that melds beautifully with the sweet maple syrup and crisp and salty bacon. And aside from a stop at your local fish market, it comes together easily (and in less than 10 minutes). Serve with a side of steamed snow peas and roasted butternut squash for a healthy, hearty, and utterly delicious meal. Click here to see The New and Improved Farm-Raised Salmon story.

Miso-Glazed Broiled Salmon
Miso is such a prominent flavor, just a little will add a whole new dimension to a dish. This easy salmon recipe takes a little prep, a little waiting, and just 10 minutes in the oven. During the warmer months, bring this recipe outside and make it on the grill, instead.  Click here to see The New and Improved Farm-Raised Salmon story.
