Spring Onion and Quinoa Soup with Roasted Asparagus
This soup is everything I want from a spring meal. Its broth is infused with the sweetness of spring onions, and high-protein quinoa adds just enough body to satisfy. I roast the asparagus first and add it last so that it retains its taste and texture, adding another dimension to this soup that always hits the spot. — Terry Walters, Eat Clean. Live Well.

Roasted Asparagus Salad with Ginger-Citrus Vinaigrette
Every year, I look forward to asparagus season more than words can express. But, this year something really special happened: I’ve actually planted my own asparagus bed! I ordered asparagus crowns (roots), which look like octopuses with skinny legs, and dubiously planted them in a raised bed, following the instructions to the letter. I wasn’t sure that they would come up, but not two weeks later, my baby asparagus are popping out of the ground with gusto. And even though I won’t be able to harvest from my asparagus patch for two years, when I see those frisky stems emerging from their bed the wait seems well worth it. In the meantime, I’ll get my fresh spears from one of our local farmers markets and make today’s exotic and massively flavorful salad as many times as I can before the season has passed. I came up with this recipe after buying my first asparagus of the season, during a trip to the farmers' market. It was a beautiful, sunny day, and the place was bustling with eager shoppers. After spending the morning out and about, I came home and wanted to prepare a quick and easy brunch with my farmers' market finds: Asian-Roasted Asparagus & Oyster Mushrooms with Fried Egg! Perfect for the Spring season!
