I love panzerotti's cooked this way and ever since the pizza place that used to make them closed down I have been trying to figure out how to do them justice.I think I have come pretty close.Prep time will depend on whether you make your own dough. I use a bread maker which takes two hours for the dough.

Like most Barese, author Nancy Harmon Jenkins' friend Pino Marchese likes hot panzerotti with ricotta forte, an almost painfully strong cheese spread that is perhaps closest to Limburger. But these are just as delightful on their own, especially when made as small as possible in a one-bite size. The stuffings vary, but the most popular is a highly seasoned mixture of onions, black olives, capers, anchovies and tomatoes—a ubiquitous filling and topping for Pugliese-style calzone and pizza.

These are delicious. Please be careful eating because even if okay to eat on outside, the inside can be quite hot and wouldn't want you to burn your tongue. I got this recipe from Mario Batali. That man can cook!
