Top Rated Onion Soup Recipes

Try this French bistro classic for a quick and easy winter treat. Although this soup's origins are disputed, many believe that it was invented by King Louis XIV who, when coming home late from hunting, would only find bags of onions, butter, and Champagne in the kitchen, thus bringing to fruition the base for this traditional French soup.  Today it is topped with thick baguette slices and melted cheese for a perfectly rounded-out dish.

The ultimate cold weather dish—soupe à l’oignon gratinée—was the pièce de résistance of a popular winter cooking class called “Midnight in Paris” that I taught several years ago. This recipe is based loosely on the first onion soup I ever made from Julia Child’s Mastering the Art of French Cooking, Volume I. The main difference is that I suggest using a quick short-cut beef stock instead of Julia’s homemade stock. This is a soup where the quality of ingredients used for the topping matters. An aged Gruyère and slices of a good crusty baguette will add immeasurably to the dish’s success. One last tip direct from Julia: She suggests stirring some small strips of Gruyère into the soup before adding the toasted bread slices. Those little strips melt as the soup simmers in the oven, melding beautifully into the onion broth.Recipe excerpted from Soup Nights: Satisfying Soups and Sides for Delicious Meals All Year by Betty Rosbottom, Rizzoli New York, 2016. Click here to purchase your own copy.

Onion Soup with Bacon, Winter Herbs, and Gruyère
This adaptation of French onion soup boasts bacon and a generous measure of herbs, in addition to the classic cheese-topped toasts. I particularly like it on a cold day, especially with a glass of full-bodied Belgian ale or a homebrew. Click here to see 'Kitchen Garden Cookbook' Offers Help with Growing Produce at Home.

Green Lake Casserole
The original version of this recipe is called Green Lake Chicken, and it was created by my mother in order to feed the large crowds of family that would be running around our family's camp up in Green Lake, Maine. Because I've gone vegetarian for a little while (for denominational reasons — not permanently), I created this meatless version of it. Hers uses cream of chicken soup and shredded chicken, and while the mushrooms and lentils weren't a part of hers, they may become part of my non-vegetarian version.
