This is a quick, traditional potato salad that is so easy to make! White, red, or Yukon Gold potatoes are all good choices for this recipe (russet potatoes are not a great choice because they may fall apart). I don't peel my potato, but you can if you prefer. Please be sure to read the label to ensure your choice of Italian salad dressing is gluten-free. Click here to see 7 Surprising Things You Can Make in the Microwave

You don’t need a deep fryer to make crispy potato chips. We toss thinly sliced potatoes with just a touch of olive oil, pop them in the microwave and voilà! Crispy, crunchy homemade potato chips with 8 grams less fat per serving than regular chips.

Thats right, you cook it in the microwave! This came from a newspaper around 1994 and I'm still making it today. It is SUPER easy and delicious. We like to add steamed broccoli to ours when served. Enjoy.

You can substitute Curry Powder for the garlic powder and ground cumin. If you need an extra kick substitute chili powder and ground chipotle pepper for the garlic powder and ground cumin. This recipe was used in a 1100 watt microwave.

Lately, Mom's been doing quite a bit of my cooking thanks to being sick, dizzy, and nauseated. Other than canned chicken noodle, grilled cheese, and other "easy on the tummy" foods, potato soup is one of those things I'm enjoying because it's not spicy. This microwave recipe is relatively fast and pretty good. It's very basic and is a great "starter" recipe to be altered in any way.

I've had this recipe for 15 years. From the first time I made it, my family couldn't get enough. Now that our three daughters are grown and married, they fix it for their families, too. --Sharon Price of Caldwell, Idaho
