I’ll let you know when the burger business has run out of ideas, but it won’t be soon.

Track the trendy ingredients in the Matcha Royale with Cheese burger at Bread Meats Bread in Glasgow, Scotland: Two smashed beef patties with umami-miso ketchup and wasabi mustard mayo in an artisan matcha (powdered green tea) infused brioche sesame bun with a side of furikake seaweed seasoned fries.

More proof that vegan burgers needn’t be uninteresting is this Pizza Burger from Boon Burger Cafe in Burlington, Ont. It tops the house grilled Boon patty (mushrooms, brown rice, onion, garlic, lemon juice, tofu and oats, and more) with vegan cheese, marinara sauce, tomato, red onion, fresh spinach and arugula drizzled with basil oil.
The #5 burger at Farm Burger in Huntsville, Ala., is a grass-fed beef patty with Humble Heart Farm goat cheese, pecan pesto, marinated tomato and everyone’s new favorite topping, arugula.
Cannibale Royale in Amsterdam always goes all-out. The Dutch burger bar’s new La Baba burger is a 150 gram (5.3 oz.) Angus beef patty with baba ganoush, pickled cauliflower, goat cheese, pistachio and spinach on naan bread.
The Hungry Hog burger at Half Man Half Burger in Saint Leonards, England, starts with a single beef patty and then piles on slow-cooked (minimum eight hours) pulled pork, maple-soaked bacon, Monterey-Jack cheese, slaw and house Memphis Screamin’ Whiskey BBQ Sauce.
The burger force is strong with Seattle’s Lunchbox Laboratory. The ObiJuan Kenobi burger is a patty of braised langua (beef tongue) and Kobe beef with roasted ramps, heirloom tomato pico de gallo, Manchego cheese and cumin-lime ranch.
Bet on Stripburger in Las Vegas to have an inventive burger special each week. The latest is a quarter-pound beef patty with melted pepper-Jack cheese, smoky chipotle chile mayo, house-made jalapeño bacon and fried onion strings.
I may need to organize a field trip to Lithuania to visit burger joints such as Boom Burgers Lithuania in the capital, Vilnius. It has wild combinations every week. Lately it was The Surf & Turf Burger: a Black Angus beef patty topped with melted English Cheddar, a crispy soft-shell crab, sweet chili sauce, iceberg lettuce and charred-onion mayo on a brioche bun.
