Mini Lemon Poppyseed Muffins ­ Paleo/Gluten Free

More and more peo­ple are becom­ing more health con­scious about their food choices as we become more knowledgeable about our food process and where it comes from. I cre­ated this recipe for those fol­low­ing a Paleo or Gluten Free diet or any­one in the mood to try some­thing new.



•1 cup Almond flour
•1/4 cup coconut flour
•1/2 tea­spoon sea salt
•1 tea­spoon bak­ing soda
•1/4 cup organic honey
•1/4 cup coconut oil, melted
•3 eggs
•juice and zest of lemon
•1 table­spoon poppy seeds


1.Pre­heat the oven at 350 degrees.
2.In a medium size bowl sift together the almond flour, coconut flour, sea salt, and bak­ing soda.
3.In a large bowl whisk together the honey, coconut oil, eggs, lemon juice, lemon zest and poppy seeds. Add the dry ingre­di­ents into the wet ingre­di­ents and mix just until com­bined, do not over mix.
4.Scoop the mix­ture into greased mini muf­fin cups or lin­ers if using, about 1 table­spoon per muf­fin cup.
5.Bake for 10 — 11 min­utes or until done. Let cool and enjoy!
