Fried green tomatoes are a classic, but few people outside of the South attempt to make them. However, it's a versatile dish that is incredibly easy to make — they're great as a side dish, on top of a burger or sandwich, or as an appetizer. And kids tend to love them, too, so they are an easy addition to any family meal. The key to this dish is that the green tomatoes are more solid than riper tomatoes, and they hold up better to frying. Chipotle Pimento Cheese
I can’t remember a time when there wasn’t a tub of pimento cheese in my refrigerator. This creamy combination of cheese, mayonnaise, and pickled red peppers known as pimentos (though spelled pimiento by those not from the South) is quite versatile. It works well as a dip for chips, as a filling for celery, or as a spread for a sandwich. And as it’s a comforting crowd-pleaser, you’ll find it is welcomed not only at celebrations but even after a funeral. Now, you certainly don’t have to wait for a funeral to make pimento cheese, as it’s appropriate anytime. People love to argue about how best to make it, and there may be purists who scoff at my inclusion of chipotle chiles, lime juice, and cilantro. I don’t mind — it just leaves more for those of us who like it spicy. Serve with tortilla chips, crackers, or celery sticks. This also makes a fine filling for a whole, hollowed-out jalapeño.

A trip to the magnificent Blackberry Farm in Walland, Tenn., convinced me that as a Californian, I'd grown up without one of the most important yet basic cheese-related foods ever invented: pimento cheese. The Blackberry Farm version uses their flagship sheep's milk cheese called Singing Brook, but the recipe is no less spectactular with Cheddar. The celery is my nod to the oft-found accompaniment to pimento cheese.

BeeStew Pimento Cheese
Since I’m in the middle of divorcing myself from my current cable company and am debating not having cable at all, I’ve been watching a lot of Hulu Plus lately. Just to see if I can handle not having my beloved cable for a while.  With that being said, I’m watching the entire season of random shows, one of those shows being Nashville.  I really didn’t think I was going to like this series as much as I did this weekend.  I’m not a huge fan of shows that take place in the South, simply due to the actor’s accents.  Some of them just can’t get that twang down.  But the actors on Nashville do a great job.  Plus I love seeing a few of the places I use to go to when I lived in Tennessee. Anywho, watching the show put me in the mood for some southern treats, thus this pimento cheese recipe.  It’s a simple recipe but it packs a punch with the sharp cheddar. I also kicked it up a notch by adding some green chilies. I opted to put my pimento cheese dip on a sandwich but you can use it however you'd like. So yummy!

John “Blue” Avila was born into the barbecue business, as the first grandson of Texas food legends A.C. & Mary Saenz of A.C. Saenz Tamales & BBQ est. 1968. Avila was previously the pitmaster at the world-famous Franklin's Barbecue in Austin (widely-considered to be the best in the country) and is now working as Executive Chef at Morgan’s in New York.  He handles a number of turkey items on their grill including Turkey Tails and slow-oak-smoked turkey.
