Baked Zucchini Sticks
I saw this recipe on the food blog Pinch of Yum and it looked so tasty! Pair a trip the the farmers market for fresh zucchini and a long holiday weekend, and I knew I had to try them! I added an extra egg white to the recipe, along with Parmesan cheese and ground red pepper. If you prefer cutting your zucchini in rounds instead of sticks, that option would work well, too! This recipe serves about 2 people. As recommended, I served them with marinara sauce for dipping, as well as a flavored mayo dip. Delicious! Thanks Pinch of Yum!

Baked Zucchini with Goat Cheese
As a tasty alternative, omit the mint and baste the cheese-filled squash with garlic-infused olive oil, using a fresh rosemary sprig as your basting brush. If you're cooking outdoors, try grilling the zucchini instead.

Baked Zucchini Sticks
OK, so I have a serious obsession with anything breaded — breaded cheese, breaded chicken, breaded onion rings. Mmm, it just makes everything taste that much better. So why not zucchini? I wanted to make a healthier version without all the butter and oil that is required when deep-frying these babies. Baked is the way to go people! I added a hint of Parmesan to the Italian breadcrumbs and these tasted absolutely amazing.
