What’s intriguing this week? For one, how far crowdsourcing has come. The first two burgers on this week’s list are customer creations, winners of burger-bar competitions, and they’re pretty sophisticated–chipotle Gouda cheese, Portobello-mushroom cap buns, etc.—not silly. Another ongoing trend tapped here is greater incorporation of vegetables and fruits into burger builds. Italian burger bar Fatto-Bene has sautéed spinach; Victory Burger has quince, pears and Napa cabbage. And I count six different kinds of cheese here, reflecting burger bars’ growing cheese knowledge and usage.
