Grilled Shrimp and avocado crostini

Think avocado toast meets bacon wrapped shrimp. This is a fun, easy, satisfying appetizer for your next gathering.

12 Large Shrimp 26/30 peeled and deveined 12 Baguette slices ½ inch thick 2 Tablespoons plus 2 tsp Olive Oil 2 Tablespoons BBQ Buddha Belly Rub or your favorite BBQ Rub 1 tsp. Fresh Lime Juice 2 slices Hickory smoked Bacon (Thick cut) cut in strips Salt and pepper to taste 1. Heat oven to 350 degrees 2. Place the baguette slices on a baking sheet and brush with olive oil. Season with salt and pepper. Bake for 10-12 minutes. Set aside and let cool. 3. Lightly coat shrimp with olive oil and then BBQ rub. Grill on med heat 4-6 minutes or until cooked through. Let cool. 4. Fry bacon strips till cooked through and just crisp. Drain on paper towels. 5. In a small bowl mash the avocado, lime, salt, and pepper together. 6. To assemble: Spread a layer of avocado on the crostini. Top with the shrimp and bacon. Serve immediately.
