Today on the Bite Tonight: The Rabbit Hole
Hands down, my favorite place on our Colorado trip was to the Rabbit Hole. Located in Colorado Springs, the Rabbit Hole was once the county morgue years ago. Now, it is a sexy and swanky themed restaurant with a very hip and cool vibe. It’s entrance is literally a hole on Tejon St in Downtown Colorado Springs. What looks like a bus stop glass enclosure is actually the door that leads you downstairs into the Rabbit Hole. Everything is black and red and dimly lit with creative references to the Rabbit in Alice in Wonderland. The menu consists of a “Eat Me” and “Drink Me” sections and includes items such as Bacon Wrapped Rabbit Meatloaf, Fried Bunny Bites, and Carrot Cake. See how they ranked.

Price: 3.5 out of 5 bites (a tad pricey, but portions were huge)

Cherry Braised Buffalo Short Ribs: On bacon Cheddar mashers, cherry demi glaze, and string beans. These were huge! Tender, slightly sweet and rich, and melted in your mouth. The short ribs fell apart with the slightest tough. The demi glaze added a nice sweetness to off set the salty buffalo. The mashers were creamy and delicious. The string beans were bright with a little crunch, just the way I like em!
Seafood Angel Hair Pasta: Lobster, shrimp, scallop, asparagus, cherry heirloom tomatoes, champagne cream sauce, and crispy leeks. Very generous portions of seafood in a smooth creamy sauce. Not too rich, but still decadent enough to leave you wanting more!
Chocolate Covered Bacon: Thick strips of bacon generously coated in milk chocolate and dusted with powdered sugar. Decadent and delicious!
I really liked the overall feel of this restaurant. It was creative, but wasn’t over the top. I loved the fact that it really was a rabbit hole, underground Downtown Colorado Springs. Service was great and our server did a good job at educating us on the specials, menu offerings, and giving us some background of the restaurant history.
After dinner, we headed to an 80’s wedding reception to dance off our indulgences. Watch out, here comes Richard Simmons and his “Sweatin’ to the Oldies” dancers! The night was filled with laughs and good company.
