LangeTwins' David Akiyoshi Expands Palates, One Pairing at a Time

LODI, Calif., Sept. 20, 2016 /PRNewswire/ -- LangeTwins Family Winery and Vineyards is in the thick of the 2016 harvest, with robust reds like Cabernet Sauvignon coming off the vines as fall approaches. LangeTwins' winemaker David Akiyoshi turns his attention to making the most out of a standout vintage, and toasting a successful start of harvest with his favorite fall wine pairings.

"The flavor intensity and ripeness of the crop are remarkable so far," said Akiyoshi. "These grapes give us the opportunity to produce creative, true to varietal wines which capture the Lodi AVA, and that's very exciting."

Akiyoshi's 30 years of experience have been fueled by an intense curiosity to learn more about the craft, and guided by the philosophy that wines are best served as an accompaniment to food and shared with friends – a pertinent topic as fall entertaining season approaches.

"I think wine enthusiasts should be constantly curious, especially when it comes to pairings," continued Akiyoshi. "Nothing says fall quite like a big red – specifically our velvety LangeTwins Estate Zinfandel and ribs off the barbecue – but there's always room for outside-the-box pairings on the lighter side, like LangeTwins Estate Pinot Noir and a bite of raw tuna, which really creates a freshness not found in most of the season's pairings."

Whether it's a tailgate or dinner al fresco, Akiyoshi recommends an understanding of flavor profiles and guests' preferences prior to experimentation with a pairing menu.

"Once you know the flavors your guests prefer – take spicy for example – you can begin to challenge palates with unique pairings for fall, like an Indian summer inspired pairing of Gewürztraminer and red curry," he explained. "Pairings are a uniquely individualistic experience, where personal preferences are the only thing that really matter – my job at LangeTwins is to provide guests the opportunity to learn something about their palate, and that's what I love about my work."
