Breakfast is my favorite meal of the day. Many studies have linked eating breakfast to good health, including better memory and concentration, lower levels of “bad” LDL cholesterol, and lower chances of getting diabetes, heart disease, and being overweight. This beautiful Cheesy Potato Bacon Sausage Egg Casserole is out of this world good.  It takes a little bit of time to prepare but is worth all the effort and time….every single cheesy bite. It is a hearty meal so if you sleep in a bit you could even call it brunch!

It is chock full of potatoes, sausage, onion, red pepper, and cheese.  It is seasoned to perfection and topped with crisp bacon.  It takes about one hour to bake but could easily be prepped the night before and popped in the oven in the morning.  This casserole make enough to feed four but could easily be doubled and put in two 9 x 13 casserole dishes.  Maybe your family is a crew or you are expecting company.

Cheesy Potato Bacon Sausage Egg Casserole


  • 1/2 lb ground sausage
  • 2 small potatoes cubed
  • 1 small onion chopped
  • 1/2 red pepper diced
  • 1 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 12 large eggs
  • 1/4 cup water
  • 1 teaspoon dry mustard
  • 1 cup Gouda shredded
  • 2 cups cheddar shredded
  • 4 slices bacon crispy cooked and coarsely chopped


  1. In large skillet over medium heat cook sausage until just starting to brown. Add potatoes and continue cooking until the sausage has completely browned and the potatoes are starting to soften; approximately 15 minutes. Add onion, red pepper, oregano, garlic powder, onion powder, salt and pepper. Cook for an additional 5 minutes. Remove from heat.
  2. Preheat oven to 350 degrees and spray 9 x 13 casserole dish with nonstick cooking spray. Place sausage/potato mixture in the bottom of the casserole dish. Beat eggs, water and mustard in medium bowl. Sprinkle cheese over the sausage mixture and pour eggs over the top.
  3. Bake casserole dish for 40 minutes. Sprinkle with bacon and cook for additional 20 minutes.
