Butternut Squash Pizza
Butternut squash is on everything these days, so why not pizza? Matching up butternut squash with pear and blue cheese is one of the best decisions of my life. OK, not really. But, it works and it's pretty good. Try it. See all pizza recipes.

Harvest Kale Salad with Honey-Miso Dressing
I love dark winter greens, kale in particular. It's fabulous in hearty vegetarian stews, sautéed, or used in risotto. My favorite preparation, however, is in a salad. Tossed with a good dressing, it never wilts — in fact, I almost like it more the next day. This recipe was inspired by the number of colorful vegetables you can find in the dead of winter (yes, color does exist in a deep freeze). Rich butternut squash, possibly roasted with garlic and rosemary, tart dried cranberries, and buttery toasted nuts. You could also add caramelized onions, or roasted purple potatoes to the mix. And of course, a dusting of snowy, white cheese, if you're so inclined. Click here to see The Best Kale Recipes You've Ever Tried.

Butternut Squash Risotto
You can't go wrong with risotto, or roasted butternut squash for that matter, but to make this recipe extra special, I gave the squash a sugary treatment and fired all decadent engines with the risotto. It's not exactly diet-friendly, but boy is it good.
