Top Rated Béchamel Sauce Recipes

Eggplant Lasagna 1.jpg
"Well, it looks really good, but is it worth all that effort? YES. Yes it is. Take my word for it. In fact, after you make this lasagna for the fifth time (because your family keeps requesting it), it’s not going to feel like any effort at all. With eggplant slices for “noodles,” the meaty Italian red sauce and creamy coconut milk “béchamel” make this one of the dishes I’m the most proud of in the whole entire book. Enjoy!" -Casey Joy GarciaRecipe excerpted from cookbook Fed & Fit: A 28 Day Food & Fitness Plan to Jump-Start Your Life with Over 175 Squeaky-Clean Paleo Recipes by Casey Joy Garcia

Béchamel is a home-economics-class sauce. You learn to make it, but you never conceive of using it again. But a good béchamel has its place in the world, though mostly as a supporting player rather than a star. You can’t make a cheese soufflé without béchamel, some delicious lasagnas are made moist with béchamel (called besciamella in Italian), and real mac and cheese is all about the sauce, which starts with béchamel. Many béchamels are made with only milk, but I’m adding 30 percent cream because I like the depth of flavor it imparts. Don’t be tempted to add a lot of nutmeg. It’s fun to grate, but it can call unwanted attention to itself. Click here to read more about sauces.

Stuffed meatballs are just delicious. I love these blue cheese meatballs with bechamel sauce. If you are strick on the paleo diet then omit the cheese and you can stuff these with avocado, roasted red peppers or any other of your favorite ingredients. The bechamel sauce is paleo except for the cheese! If you do omit the cheese then add about a 1/4 teaspoon of freshly grated nutmeg. These are great for paleo entertaining! Enjoy… For this recipe and other entertaining tips from Cindy's Table, click here and sign up for my newsletter.

Go-Chu-Jang Mac and Cheese
Recipe Courtesy of BibigoYou may be unfamiliar of the popular Korean condiment, Gochujang, but it’s time to get acquainted. This red chili paste is savory, spicy, and flavorful; using even a little completely transforms any boring plate of food. Gochujang provides the perfect counter-balance to the richness of macaroni and cheese.
