Grilled Potato, Onion, and Arugula Salad
This hearty, healthy, filling salad is tasty and easy, the latter because it’s almost completely grilled. It’s seriously simple and tasty. Sweet from the onion and pepper, tangy from the grilled lemon, filling and texturally satisfying because of the char-grilled potatoes, it’s a salad that doesn’t feel like a "salad." Roasted Beet and Arugula Salad with Toasted Pumpkin Seeds
Roasting beets accentuates their natural sweetness, while toasted pumpkin seeds and arugula bring forth contrasts in texture and flavor, respectively. Radishes are thrown in for good measure. I used candy-striped beets here, but you should buy whatever looks best. Click here to see the Not Just for Carving: 8 Pumpkin Recipes story.

Meatballs
This is the first ball I developed and the first ball I served to a member of the paying public.
It was the moment when things really started to roll, with my cooking truly exposed and the adrenaline pumping. It felt good. This is a ball with plenty of flavor and texture, and I like to load up the red pepper flakes to increase the fire. They can take a good braise in any sauce
but I serve them in my spiced tomato and red onion sauce. From The Meatball Cookbook, by Jez Felwick

While Chef Jim Botsacos of Molyvos Restaurant in New York City adds some baby arugula to the lettuce for added flavor and texture in this recipe, he has also used chunks of endive. — Allison Beck
