Lemony Kale Spaghetti

For this dish, as the pasta bubbles away toward al dente, kale strips are tossed with oil, red pepper flakes, and lemon juice to begin to break down the kale’s tough fibers. The pasta is then added into to the mix —with a touch of pasta water for added moisture — then generously sprinkled with pecorino cheese.

Salsa Verde Spaghetti

Spaghetti gets a Mexican twist when A Mind “Full” Mom tops her pasta with spicy salsa verde made with roasted tomatillos, onions, and jalapeños. She then garnishes her green dish with lime juice and cilantro. Check out her recipe here.

Spaghetti alla Checca

To keep your mozzarella cubes from becoming stringy and chewy, freeze them briefly before adding them to the hot pasta. They’ll come to the proper temperate without melting.

“The sauce for this pumpkin bolognese spaghetti ends up tasting rich with the flavors of beef and tomato and has the slightest hint of sweetness from the delicate pumpkin purée. You will be surprised at how flavorful the sauce is, considering how quickly this meal comes together. This pumpkin bolognese spaghetti can be made in 30 minutes, making it a quick and wholesome meal to enjoy with the family,” writes Mon Petit Four blogger. Check out her recipe here.
