Why do vegetarians always have to explain their dietary choices to scoffing meat-eaters? Eating a vegetarian diet doesn’t have to mean that you eat like a bunny rabbit, nibbling on carrots and lettuce all day. In fact, there are plenty of vegetarian options out there that pack in the protein. Finding hearty meals that don’t include your favorite furry friends is actually easier than you — and your carnivore pals — think.
Try integrating more legumes into your diet. Black, refried, and pinto beans are all easy to add to soups, salads, and rice to turn a lean dish into a truly filling meal. Traditionally meaty recipes like chili and shepherd’s pie are easily adaptable for vegetarians by subbing in soy products like tofu and tempeh.
