Spicy and fresh flavors are incorporated into this hearty vegetarian salad.
Ingredients
- 15 Ounces black beans
- 15 Ounces corn
- 1/2 red onion, diced
- 1/4 Cup crumbled feta cheese
- 3 Teaspoons chopped cilantro, plus more for garnish
- 1/4 Cup olive oil
- 3 Tablespoons red-wine vinegar
- 1 Teaspoon salt
- 1/2 Teaspoon black pepper
Directions
Place the beans in a large bowl. Add in the corn, red onion, feta cheese, and cilantro. Pour in the olive oil and red-wine vinegar. Season with salt and pepper. Mix ingredients together and let sit for 30 minutes for flavors to meld together. Garnish with a sprinkling of chopped cilantro.
