  • 1 1/2 Cup diced fresh avocado
  • 1/2 Cup diced fresh tomato (beefsteak or Roma/plum tomatoes)
  • 2 Tablespoons chopped fresh cilantro
  • 2 Tablespoons minced red onion
  • 1 Tablespoon fresh lime juice
  • Salt and freshly ground black pepper, to taste
  • Assorted vegetables, for serving

Directions

In a medium bowl, combine the avocado, tomato, cilantro, onion, and lime juice. Stir to combine. Season to taste with salt and black pepper.
