Alexis Kornblum Davidson is the talent behind the acclaimed food blog Lexi’s Clean Kitchen. She is particularly known for her gluten-free and paleo recipes and her practical approach to modern dieting, which is achieving health and happiness through one simple concept: clean eating.  

Her new cookbook, Lexi's Clean Kitchen: 150 Delicious Paleo-Friendly Recipes to Nourish Your Life, set to release November 8 is a continuation of this approach to whole food eating and health.  

The Daily Meal got a hold of six recipes from Davidson’s new book to feature on the site including Caramelized Butternut Squash, Herb Butter Salmon With Blistered Tomatoes and Green Beans, and her Best-Ever Paleo Fluffy Pancakes.

The Daily Meal: What is your philosophy of cooking?

Lexi Davidson: My philosophy is simple: When cooking with real, nutrient-dense foods, you'll live a more fruitful, healthy, energized, and overall happy life! My goal is to make clean eating approachable (and fun) for every type of cook in the kitchen. 

How did it inspire the recipes you chose to include in this book?

My cooking philosophy is essentially what inspired me to write this book, but when sitting down to choose my best recipes my philosophy really came into play. My goal with the book is to deliver my readers the ability to make informed food choices, succeed in their journey toward health, and, most of all, to truly enjoy mealtime. All of these factors inspired me to create really good and simple recipes that everyone can have success within their own kitchen at their own pace. You won't find overly complicated recipes with a million ingredients that you can't find in your local grocery stores or markets because that just isn't realistic. I wanted this book to be used daily for meals, for holidays, and for every occasion! This book is so much more than a handful of healthy recipes; it's also about balance. It provides sweet treats and cocktails, and all things in between so you can eat healthily and also indulge when you want to.

What is your favorite recipe in the book and why?

Oooh, that's a hard one! I love the Waffles and the Pancakes, and the One-Pan Arroz Con Pollo. I love how the waffles and pancakes are totally the “real deal,” and love the traditional flavors of the Arroz Con Pollo and how simple it is to prepare! 

How do you hope readers will use this book, and what do you hope they take away?

I hope my cookbook helps readers cook up simple yet seriously delicious meals without feeling overwhelmed in the kitchen. I hope they take away that healthy eating can be fun and exciting, and hope they’ll see — and feel — the benefits in their daily lives when doing so.
