Brooklyn’s Fatty 'Cue Is Reinventing the Salad (Slideshow)
For the Pig Ear, avocado mousse is spiked with orange tobiko.
Avocado mousse is swiped along the inside of the bowl.
The sliced pig ear is put in the bowl and topped with an uni sauce.
The salad is finished off with a little sea salt on top.
This dish is only available at the Brooklyn Fatty 'Cue location.
Frying the Bacon
For the 'Cue Bacon, 5 to 6 ounces of bacon is friend to perfection.
Just look at that bacon.
Fresh coconut is added to a mixture of cucumber, ginger, Thai chile, fresh mint, cilantro, and thinly sliced apple.
Cutting the Bacon
The bacon is sliced in fairly large pieces for the salad.
Now that's a salad we can get behind.
