Ingredients are sourced as locally as possible with items like Queen Creek olive oil, Mesa Farms goat cheese, Sunizona heirloom tomatoes, Mount Hope dried berries, and Arizona grass-fed beef. The menu is fresh with fan favorites of bacon-wrapped Buffalo tenderloin with mole oaxaqueño, foie gras, cherries; Chilean sea bass with a pecan-herb crust; mussels, clams, and smoked–tomato consommé; vegan pappardelle wild mushroom ragout, walnut gremolata, rapini, and coconut milk alfredo. You can choose to dine indoors or alfresco under the Sonoran stars. It is truly breathtaking.
Proof is a Wild West canteen for today’s crowd. Craft beer and cocktails are flowing while fun-loving patrons enjoy a game of shuffleboard. The menu is filled with home-style comfort foods like shrimp and grits, chicken and waffles, and house-made ice cream sundaes. They even have a soda jerk station.
