Bruxie blew into Denver this spring and proved that waffles are great as a sandwich. With these light, slightly sweet and super airy bread substitutes, favorites include savory like prosciutto and gruyere, hot pastrami or fried chicken. Sweet sensations include the ever-popular lemon cream and berries or s'mores with Belgian chocolate, graham crackers and toasted marshmallow. The Dorchester Social Eatery's impressive 4,000-square-foot rooftop lounge with unobstructed views of the Rocky Mountains and Denver's downtown skyline is the newest destination for an incredible al fresco brunch. Executive Chef Michel Wahaltere's Brussels Waffles are a nod to his favorite breakfast growing up in Belgium.
