Sunday Night Family Dinner Menu

There is no better way to end a fun-filled weekend (or start the work week off on the right foot) than with a simple yet delicious meal with the family at home. There is no need to spend all day cooking in the kitchen, though. The key is to keep the menu simple and choose dishes that will do some of the work for you.

Pot-Roasted Chicken

One chicken is great to serve four. But while you have the oven on, why not do as Mindy Fox does and roast a second chicken at the same time? That way you'll have one for dinner and another to use with any leftovers the next day. Pull the chicken off the carcass, then try your hand at making a tartchicken salad, and/or steamed buns.

Grilled Hearts of Romaine

Romaine hearts, halved and grilled outside on the barbecue or inside on a grill pan, make for an unconventional and delicious alternative to a green salad.

Israeli Couscous Salad

A side dish that is easy to make, can be assembled in advance, and is full of hearty flavors.

Lattice-Top Blueberry Pie

Serve up slices of this classic summertime treat with a scoop of vanilla ice cream for dessert.
