  • 1 cubed seedless watermelon
  • 2 large heirloom tomatoes, chopped
  • 1 garlic clove, pressed
  • 1/2 white onion, finely chopped
  • 1 cucumber, chopped
  • juice of one lime
  • 1 handful chopped cilantro
  • 1/2 jalapeno, deseeded
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • goat cheese, to garnish
  1. Place all ingredients in a Vitamix or blender. Pulse a few times, but don’t overblend. Pour into a bowl and garnish with goat cheese.
