Vegan Black Bean Chili

Create a rich and flavorful vegan chili with a blend of tasty beans, vegetables, and spices.

Ingredients

For the Vegan Black Bean Chili

  • 1/4 Cup coconut oil
  • 3/4 Cups onions, chopped
  • 4 Cloves garlic, minced
  • 1/4 Cup diced tomatoes
  • 1/4 Cup bell pepper, finely chopped
  • 1/4 Teaspoon cayenne powder
  • 1/4 Teaspoon chili powder
  • 1 Tablespoon fresh cilantro
  • 2 Cups vegetable broth
  • 2 Cups water
  • 2 1/2 Cups black beans
  • 1 1/2 Cup cooked chickpeas
  • 1/4 Cup kale

Directions

For the Vegan Black Bean Chili

In large pot melt oil on medium heat. Add onions garlic and cook for 3-5 minutes, stirring occasionally. Add bell pepper and tomato and cook another 1-2 minutes. Add cayenne, chili, cilantro. Add broth, water and beans. Bring to gentle dinner and cook uncovered 25 minutes. Add kale, cook another 5 minutes. Serve. Salt & pepper to taste.
