Ingredients
  • 4 cup sugar
  • 2 cup unsweetened valrhona cocoa powder
  • 1 itty bitty pinch red pepper flakes
  • 1 teaspoon salt
  • 1 ¼ cup water
  • 1 ¼ heavy cream
  • 1 teaspoon vanilla extract
  • hand-cut homemade french fries (or fries of your choosing)
  • mini marshmallows
  • chocolate sauce
  • marshmallow sauce
  • crumbled graham crackers
  • salt
  • parsley, for garnish
Directions
  1. Place the sugar, cocoa, red pepper flakes, and salt in a saucepan or small pot. Turn the heat on and then add the water and heavy cream. Bring the mixture to a boil while stirring constantly. When the mixture begins to boil, add the vanilla. Check the consistency by dipping a spoon into the mixture and dripping a few drops onto a room-temperature plate. When it reaches the desired consistency, turn the heat off and set the chocolate sauce aside.
  2. Prepare the French fries by baking or frying them. Crispy, well-done fries are best for this recipe.
  3. Top the fries with mini marshmallows, a drizzle of the chocolate sauce, a drizzle of marshmallow sauce, and a good handful of graham cracker crumbles, according to taste.
  4. Salt the S’more fries and garnish them with a few sprigs of parsley.
