With a combination of lime juice, grapefruit juice, and simple syrup, the Up in Smoke from The Writing Room in New York City is the perfect combination of bitter and sweet.

1 1/2 ounce montelobos mezcal
3/4 ounce simple syrup
1/2 ounce lime juice
1/4 ounce aperol
3 drops brooklyn hemispherical rhubarb bitters
1 small egg white
1 1/2 ounce fresh grapefruit juice

Directions

Dry shake the egg white, add other ingredients and shake with ice. Serve in a martini glass.
