Raspberry Avocado Salad

A simple superfood salad that takes no time to make

Upgrade your colorful fruit salad with powerhouse ingredients including nutrient-dense avocado and refreshing herbs.


For the Dressing

  • 1 Tablespoon lime juice
  • 1 Tablespoon lemon juice
  • 1 1/2 Tablespoon olive oil
  • 1 Tablespoon apple cider vinegar

For the Salad

  • 2 Cups kale or spinach
  • 1/4 Cup red bell pepper, diced
  • 1/4 Cup fennel, chopped
  • 1/2 Cup raspberries
  • 1/4 Cup mint, finely chopped
  • 1/4 Cup cilantro, chopped
  • 1 Tablespoon hemp or flax seed
  • 1 avocado, chopped


For the Dressing

In a small bowl, whisk all dressing ingredients together. Save any excess dressing in a mason jar and store in the fridge.

For the Salad

Chop and diced ingredients and dress with dressing. Add salt and pepper to taste.
