Commonly known as the Peruvian hot pepper, ajís can range in heat from 40,000-50,000 on the Scoville heat meter. Ingredients
  • 7 ice cubes
  • 3 ounce pisco, infused with three dried aji peppers
  • 1 ounce freshly squeezed lime juice
  • 1 ounce simple syrup
  • 1 ounce egg white
  • angostura bitters
Directions
  1. Add the Pisco, lime juice, simple syrup, egg white, and ice cubes to a cocktail shaker and shake vigorously for 20 to 30 seconds. Pour into a chilled, stemless martini glass and garnish with three drops of bitters.
