Heat a non-stick pan over a low to medium heat. Grease pan with coconut oil.
In a medium bowl, whisk together the eggs, milk, and cinnamon. Transfer the egg mixture to a low-set bowl.
Soak each slice of bread in the egg mixture for 10-15 second on each side.
Cook the bread for 2-3 minutes on each side until golden brown.
Add desired toppings.
Serve warm, and enjoy!
