- 1/2 medium white cabbage, cored and finely shredded
- 2 large carrots, peeled and coarsely shredded
- 1/4 level cup fat-free mayonnaise
- Juice of 1–2 lemons, to taste
- 2 Tablespoons plain quark or fat-free plain Greek yogurt
- Salt and freshly ground black pepper
In a large bowl, combine the cabbage, carrots, mayonnaise, lemon juice to taste and quark or Greek yogurt.
Toss to mix well and season with salt and pepper. Cover and chill until ready to serve.
