These coconut butter pastel bunnies are the perfect treat for an Easter egg hunt! They’re chock-full of healthy fats, magnesium, potassium, vitamin C, and iron, and they’re super yummy. Try making them with Berry Bliss and Green Dream Coconut Butter or popping them out in other spring or Easter-themed shapes — I would love to see some coconut butter eggs and tulips!This recipe is provided by Sophie Jaffe, LA-based health and wellness expert, certified raw food chef to the stars, yoga teacher and mother of two.

Ingredients
  • 2 cup coconut butter, such as berry bliss coconut butter, softened (you can also use green dream coconut butter instead or try doing the recipe with both flavors!)
  • 4 tablespoon coconut oil
Directions
  1. Create a double boiler by placing a heat-proof bowl over a pot of simmering water. Make sure that the base of the bowl does not touch the water. Add 2 cups of Berry Bliss Coconut Butter to the bowl along with 4 tablespoons of the coconut oil. (Note: If your coconut butter is too firm to scoop out 1 cup easily, simply set it in a shallow pot of warm, but not boiling, water for several minutes, or until soft enough to scoop.)
  2. Stir the Berry Bliss Coconut Butter and coconut oil constantly as they melt until they are well-combined. Once combined, pour into bunny molds or your favorite Easter-themed silicone mold. Refrigerate for about an hour or until hardened and then remove your coconut butter melts from the mold. Store in refrigerator until serving.
