Ingredients

  • 2 tostada shells
  • 1 Cup shredded chicken, such as Hormel Taco Meat’s seasoned and shredded chicken, heated
  • ¼ Cup shredded purple cabbage
  • ¼ Cup thinly sliced red bell pepper
  • ¼ Cup watermelon, cut into 2-inch sticks
  • Juice from ½ lime (about 2 tablespoons)
  • 2 Tablespoons chopped, fresh cilantro leaves
  • 1 Tablespoon olive oil
  • 2 Tablespoons Queso Blanco crumbles

Directions

Place ½ cup of the chicken on each tostada shell.

In a medium bowl combine cabbage, red bell pepper, mango, watermelon, lime juice, cilantro, and olive oil, tossing to coat.

Place cabbage mixture over chicken and sprinkle with queso blanco crumbles.
