Ingredients
  • 2 tostada shells
  • 1 cup shredded chicken, such as hormel taco meat’s seasoned and shredded chicken, heated
  • ¼ cup shredded purple cabbage
  • ¼ cup thinly sliced red bell pepper
  • ¼ cup watermelon, cut into 2-inch sticks
  • juice from ½ lime (about 2 tablespoons)
  • 2 tablespoon chopped, fresh cilantro leaves
  • 1 tablespoon olive oil
  • 2 tablespoon queso blanco crumbles
Directions
  1. Place ½ cup of the chicken on each tostada shell.
  2. In a medium bowl combine cabbage, red bell pepper, mango, watermelon, lime juice, cilantro, and olive oil, tossing to coat.
  3. Place cabbage mixture over chicken and sprinkle with queso blanco crumbles.
