Ingredients

  • 1 Cup self-rising flour
  • 1 Teaspoon salt
  • 1 Teaspoon baking powder
  • 1 Teaspoon cinnamon
  • 1 egg
  • 1 Tablespoon butter, melted over the campfire, plus more for the pan
  • 1 Cup milk

Directions

Fill a sealable jar with the flour, salt, baking, powder, and cinnamon.

Heat a cast iron skillet over the campfire.

Crack the egg into the jar, and pour in the butter and milk. Seal the jar and shake it vigorously until you have a thick, smooth batter.

Add some butter to the skillet. Pour in the pancake batter and cook for a couple of minutes on each side, until golden and cooked through. Repeat with the remaining batter. Top with maple syrup, bacon, or fruit, and serve immediately.

Pancake Shopping Tip

What’s the difference between brown and white eggs? Besides color, nothing – different breeds of chicken account for the differences in color – quality and freshness are what really count.

Pancake Cooking Tip

In addition to keeping foods like granola, yogurt, and fruit on hand, plan ahead for hectic weekdays by whipping up extra batches of waffles or pancakes and individually freezing them for easy morning meals.
