Ingredients
  • 1 cup self-rising flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 egg
  • 1 tablespoon butter, melted over the campfire, plus more for the pan
  • 1 cup milk
Directions
  1. Fill a sealable jar with the flour, salt, baking, powder, and cinnamon.
  2. Heat a cast iron skillet over the campfire.
  3. Crack the egg into the jar, and pour in the butter and milk. Seal the jar and shake it vigorously until you have a thick, smooth batter.
  4. Add some butter to the skillet. Pour in the pancake batter and cook for a couple of minutes on each side, until golden and cooked through. Repeat with the remaining batter. Top with maple syrup, bacon, or fruit, and serve immediately.
