Blue Crab Little Gem Nicoise Salad

This homemade salad is beautifully salty

This light, beautiful salad is the perfect dish to fuel your summer dining. Sea salt makes for a perfect accompaniment in this salad dressing, balancing out the zesty citrus flavors.

Ingredients

For the Nicoise Dressing:

  • 3 Cups olive oil
  • 2 Tablespoons honey
  • 1 lemon, juiced and zested
  • 1 Teaspoon Dijon mustard
  • 1/4 Cup capers
  • 3 anchovies
  • 1/8 Teaspoon Morton Fine Sea Salt

For the Salad:

  • 6 heads little gem lettuce, washed
  • 1/4 Cup fingerlings, cooked and thinly sliced
  • 1 Cup shaved red onion
  • 1 Cup blue crab meat (can substitute tuna)
  • 1 green beans, blanched and cut into 1 inch pieces
  • 1 red pepper, 1/8-inch diced
  • 2 lemons, zested
  • 1/8 Cup chives, neatly chopped
  • 3 eggs, hard boiled and chopped
  • 1 Teaspoon Morton Coarse Sea Salt
  • 1 Teaspoon pepper

Directions

For the Nicoise Dressing:

Combine lemon juice, zest, honey, Morton Fine Sea Salt, and Dijon mustard in a blender. Start on the low setting and slowly drizzle in olive oil.

Add the capers and anchovies.

For the Salad:

In a mixing bowl, combine all the ingredients for salad and add dressing.

Serve in a chilled bowl.
