This breakfast sandwich takes brunch to a whole other level with creamy mascarpone cheese, savory eggs and pomegranate seeds.

Ingredients

For the Avocado, Egg, and Ham Sandwich With Pomegranate Mascarpone

  • 2 Slices whole-wheat bread, such as Arnold® Whole Grains 100% Whole Wheat bread
  • 1 Tablespoon pomegranate seeds
  • 1 Tablespoon mascarpone cheese
  • 1 Egg
  • 1/4 California avocado, sliced
  • 2 Ounces cooked ham

Directions

For the Avocado, Egg, and Ham Sandwich With Pomegranate Mascarpone

In a small bowl, stir together mascarpone cheese and pomegranate seeds.

Heat a nonstick skillet with cooking spray over medium high heat. Once heated, place the egg on the skillet and cook to your desired firmness, about 2-4 minutes, flipping halfway through.

Place ham on skillet to warm, about 1 minute, flipping halfway through.

Prepare sandwich. Spread pomegranate mascarpone on one slice of bread; layer with ham, egg, avocado, and garnish with pepper if desired. Top with remaining slice of bread and serve warm.
