(CBS SF) – She's best known as being in charge of the Sarah & Vinnie Morning show on Alice@97.3. and he is the husband with the sexy silver hair. For Uzette and John, making real "Game Day" Chili is how this couple rocks out for football.
We've been told that this recipe is for a slow cooker but it also works in a large pot on the stove. You may have to adjust some proportions. Uzette likes to freestyle it.
Here is the recipe:
Ingredients:
1.5 – 2 lbs. lean ground beef (meat lovers use 2 lbs)
1 onion
2-3 14 oz cans of kidney beans. (I always eyeball it, not sure)
1 small can of diced chile or jalapeño peppers, I use mild but then again I have kids. spice it up.
1 28 oz. can crushed tomatoes
spoonful of tomato paste
1 beer, your choice
your favorite chili seasoning to taste.
(I use my own but you can use 1 store-bought packet, works well)
Directions:
Brown the meat, add to the pot.
Sauté the onions, add to the pot.
Add beans, tomatoes, paste, peppers.
Add 1/2 of a beer.
Add spices.
Turn the slow cooker on low for 8-10 hours or high for 4-6 (I always cook it slow) about an hour in, stir and check consistency/spice.
If it's too watery for your taste, add a little more paste.
If it's too thick, add more of the beer.
Watch the spice, it'll get hotter as it cooks. check about half way.
I top it with fresh, homemade guacamole (with cilantro) and cheddar cheese.
