New Vegan And Vegetarian Menus On Holland America Line
Chef Rudi Sodamin has introduced a new vegetarian and vegan menu aboard all 15 ships in Holland America Line's fleet. The alternative menu includes appetizers, salads, soups, and entrées, and is available upon request at no extra cost for lunch and dinner in the main dining room.
The savory collection of dishes on the new vegetarian-only menu includes spicy lentil and garbanzo salad, grilled vegetable and tofu kebabs, and baked cheese polenta with mushrooms and artichoke hearts.
In addition to the 22 items on the new vegetarian-only menu, there are 30 new vegetarian dishes that will be added to the main dining room menu. Selections like corn and zucchini pancakes served with Southwest-style couscous salad, asparagus and zucchini torte with wild rice and sun-dried tomato coulees, carrot and Parmesan risotto topped with a lemony arugula salad and crispy carrot ribbons will be featured as a second vegetarian option in the Lido buffet during lunch.
