  • 4 russet potatoes
  • 1/4 cup unsalted butter, thinly sliced
  • salt and pepper, to taste
  1. Preheat oven to 400 degrees.
  2. Using a sharp knife, make crosswise slits in each potato, about 1/8-inch apart and stopping about 1/4-inch from the top and botton of each potato. Place 1 butter slice in each of the slits. Season with salt and pepper.
  3. Transfer potatoes to a baking sheet and bake for about 1 hour until crisp and browned.
