Greens For Breakfast

You've always been told to eat your green vegetables, and sometimes you oblige. You'll get a side of Brussels sprouts when you're out to dinner. Occasionally you'll forgo a Hemo's cheesesteak in favor of a Magic Carpet salad. If you're really ambitious you'll drink your greens and enjoy their nutritious goodness in sippable form.

But I like to have my greens for breakfast. I like to throw whatever greens I have into a steamer until tender and dress them up with drizzles of olive oil, a crispy fried egg and a generous handful of grated cheese. Maybe it's my inner health guru trying to show she exists but regardless, I'm in favor of greens making their way into my breakfast.

Greens for Breakfast


Prep Time: 2 minutes
Cook Time: 10 minutes
Total Time: 12 minutes

Servings: 1

Ingredients:
3 cups greens of your choice (I like broccoli rabe, collard greens or kale)
1 egg
1 handful grated cheese (Pecorino or Parmigianno)
Olive oil
Salt
Pepper
Red chili flakes (optional)

Directions:
1. Steam your greens. (If you don't have a steamer, throw an inch of water into a pot, place your greens on top, cover, and cook until tender).
2. Fry the egg to your liking.

3. Place the greens on a plate, drizzle with olive oil and season with salt, pepper, and chili flakes (if using).
4. Slide your egg on top of the greens and sprinkle with the cheese and more black pepper.
