Elizabeth Cook's Eggs Brunch California Recipe
Here is my recipe for Eggs Brunch California. Its not really a classic Thanksgiving Day recipe...its really for the brunch before or after the holiday.
Eggs Brunch California
(if you find yourself having to make more than just Thanksgiving dinner)
Ingredients:
2 cups. Fresh corn, approx. 2 ears
2T. butter
12 eggs
1 ½ cups sour cream
½ cup milk
4 cups shredded Cheddar Cheese
8 oz. diced green chiles
1T. Worcestershire sauce
1T. salt
1t. pepper
To Serve:
Sour Cream, chopped tomatoes, Guacamole, Salsa
Preheat oven to 325 degrees.
Saute corn in butter for 5 minutes or until just tender. Set aside to cool.
Beat eggs. Add remaining ingredients and mix well.
Add cooked corn and mix.
Pour into an oiled 9x13inch baking dish
Bake for 1 hour 15 minor until firm and golden on top.
Serve with sour cream, tomatoes, guacamole and salsa
