Ed Cavagnaro's Pumpkin Bread Recipe
SAN FRANCISCO (CBS SF) – Program Director for KCBS, Ed Cavagnaro and his wife Barbara celebrate Thanksgiving by baking a delicious Pumpkin Bread.
Ingredients:
2/3 c. room temperature butter
2 c. sugar
4 eggs
1 lb. can pumpkin
2/3 c. water
3 ½ c. flour
½ t. baking powder
2 t. baking soda
1 t. cinnamon
½ t. salt
2/3 c. roughly chopped walnuts
2/3 c. roughly chopped dates
Preheat oven to 350F.
Grease and flour two loaf pans
Mix together sugar and butter until fluffy.
Beat in eggs on at a time; blend well.
Add pumpkin and water. Stir until well-mixed.
Sift together flour, baking powder, baking soda, salt and cinnamon. Stir into pumpkin mixture.
Add nuts and dates.
Pour into loaf pans.
Bake 1 hour, or until toothpick inserted into center of loaf comes out clean.
Remove bread from loaf pans. Cool before slicing and serving.
