Charcoal Brings Kansas City-Style Barbecue To Los Angeles' Silverlake Neighborhood
TBC Hospitality Group has opened Charcoal in Silverlake. Housed in the old Lago D'Argento Pizzeria spot, the barbeque joint features Kansas City-style slow cooked meats and sausages. Briskets, ribs, and shoulders are slathered in a thick molasses and tomato sauce and cooked for up to 15 hours in their 1,700 pound in-house smoker.
Also on the menu is chicken, lamb, a banh mi sandwich with smoked pork loin, pickled vegetables, a smoked cola aioli, and hand crafted Andouille and wild Kelbasa sausages. Diners can also indulge in a big bucket of apple-smoked bacon pieces. Other sides include a pork belly confit, crispy okra, mac and cheese, heirloom potato salad, cole slaw, and cast iron corn bread.
Desserts include s'mores with marshmallows that diners can roast at their tables and banana beignets.
Located next to TBC's Italian Barbarella, Charcoal's casual is relaxed and comfortable with large wooden communal tables, comfy red leather booths, and a chalkboard wall featuring menu specials.
The bar offers an extensive choice of bourbon-based libations featuring small batches spanning 13 states. Charcoal has 80 varieties of bourbon, rye, scotch, and whiskey; an exotic beer list; and seasonal specialty cocktails including the O'Bloody Hell with bourbon, blood orange juice, lime juice, and Fresno chili slices and Backdraft with rum, lime juice, ginger, and a bourbon flame.
